Beginning next Spring, Bureau will become a small annual membership - wines made speciifically for it, seasonal collections, large formats, printed stories and gatherings.

Redwood Valley, California. August 2026
Old-vine Carignan. Five tons picked in the early morning. Half went directly to press for rosé. The rest stayed on its skins for a few days.

Two tables in Paris
February 2026 - LE BON GEORGES
I went alone and sat at the small bar. It was afternoon.
I ordered the Filet de bœuf Rossini. The waiter poured me a glass of red Burgundy. I ate slowly and watched the room. I took a few photographs.
After lunch I asked for an espresso.
Instead the waiter brought out a bottle of Jura. Then some sliced Comté on a small plate.
I stayed. Three hours passed easily.
GALLOPIN.
Galopin was different. It was dark and crowded and very late.
The owner smoked behind the bar and drank with the room. Bottles were opened. People came and went.
There was always another bottle.
At some point you looked at the clock. Waiters continued to bring beautiful dishes out into the dining room then disappeared.
It was three in the morning.
