100% Old Vine Sparkling Carignan.
Fruit was de stemmed and foot tread. Soaked on skins for 6 hours to pick up color then pressed off to a stainless steel tank.
The wine then completes the fermentation process in bottle. Disgorged by hand in March 2023.
